What's the max level of the game?
And what can you do after you max out your level?
And one more question, Can you change your secondary profession?

The max level is 20, but that's really where the game begins. You actually play the majority of the game at max level. The focus is around getting new skills and putting together a good build w/ those skills.

You can change your profession as much as you want, but there are some requirements - you must achieve a certain status in the game, (after completing a certain mission or quest), then you can unlock any of the other professions you have access to. You do still need to acquire or buy those other skills, though.

Level 20 is the max.

You can do MANY things once you are level 20. Getting to 20 is just the beginning.

After you have purchased the specific secondary from an NPC changer in certain locations, you can switch to that secondary or any others you have as many times as you want.

I have another question, are they subskills? like woodcuting or fishing? and how do i raise my stats? like str, def, and such?

You get attribute points upon leveling. you get 170 once your lvl 20 and the other 30 ae from 2 different quests, which vary depending on which campaign ya got

There are no subskills - crafting in guild wars is very streamlined - you get salvage kits and identification kits as quest rewards or by buying them from merchants, and those are used to id items you find and/or convert them into raw materials that certain artisans in towns can use to make armor and weapons for you.

So, for instance, a weaponsmith may want 100 iron ingots and 50 gold to make a sword for you. You go out adventuring, and you may get scraps or weapons you don't need, and using a salvage kit on some may return a few iron ingots. So basically, you gather up the raw materials, bring them to a craftsman NPC, and he or she takes them and a fee in gold to make your item(s). You can also simply buy the raw materials from materials NPCs if you don't want to salvage them.

there is no traditional str, def and that in guildwars. your armor is your defence, the higher armor level it is the better protected you are to put simply. there is a limit to armor level, 60 for casters, 70 for assassins, dervishs and rangers, 80 for paragons and warriors.

your attributes act as your "str" and "magic" levels from other games. basicly if your an elementalist, your fire magic spells will get more powerful as you allocate points into firemagic. same with other classes, if you want a sword to kill people with, you need to either be a primary warrior or secondary warrior and then put attribute points into swordsmanship.

health and energy can be increased to a point useing runes or insignias attached to your armor. Vitae, vigor and survivor for more hp, or attunment or radient for more energy.

Not a part of guru, but they do have a partnership to allow the skill icons, etc in build posts. You can also check out wiki.guildwars.com which is the 'official' wiki, supported by ANet.
